This recipe is inspired by a visit to my mom’s house, where I made granola for the first time. Some granola is loaded with oil and sugar. This recipe uses no oil, just a minimal amount of honey (to bind the granola together) and apple juice.
Heat oven to 325 degrees.
5 cups old fashioned oats
4 cups assorted raw nuts & grains (I use wheat bran and/or wheat germ, flax seed, walnuts, almonds, some sunflower seeds, etc.)
1 cup shredded coconut
1 tablespoon ground cinnamon
Heat in Microwave until warm:
2 cups of liquid (make at least 1/2 cup honey, and the rest apple juice)*, stir to mix together, and then add one tablespoon of vanilla extract.
Mix the liquid into the oat mixture until evenly coated. Separate mixture onto two cookie sheets with raised sides. Toast in oven until crunchy and starting to brown, about 15-25 minutes, stirring periodically. The edges will cook faster, so make sure it doesn’t burn.
Cool it in the pan, and then pour into a bowl, and add dried fruit (I like cranberries, raisins, blueberries, and cherries).
I love this granola with plain lowfat yogurt and fresh berries. Delicious!
*in a pinch, you can substitute maple syrup for some of the apple juice or honey
