I love Trader Joe’s Whole Wheat Couscous, and this is such a simple, quick dish to make.  I especially like it with grilled salmon.

1 1/4 cup boiling water
1 cup whole-wheat couscous

3 tablespoons sliced almonds (raw, or use toasted and skip second step)

1 teaspoon extra-virgin olive oil
chopped tomatoes (a handful of cherry or 1 med)
1 tablespoon fresh parsley leaves, chopped
1 clove garlic, minced
1 tablespoon capers (rinsed & drained)
course salt

1. In a bowl, mix together couscous and boiling water. Cover and let stand for 10 minutes.

2. Toast the almonds in a skillet over medium heat, until lightly golden-brown (about 3 minutes).

3. Fluff the couscous with a fork, stir in the olive oil, then add the other ingredients.  Add salt to taste, & fluff w/ a fork.
